Ingredients:
- 2 cups sushi rice
- 2 1/2 cups water
- 3 tablespoons rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 6-8 sheets of nori seaweed
- Filling ingredients (optional) such as cooked shrimp, crab meat, avocado, cucumber, thinly sliced raw fish, etc.
Instructions:
Rinse
the sushi rice in a fine mesh strainer under cold running water for about 2-3
minutes until the water runs clear. In a medium saucepan, bring the water to a
boil and add the rinsed sushi rice. Cover and reduce the heat to low. Cook for
18-20 minutes, or until the water is absorbed and the rice is tender. Remove
from the heat and let the rice sit, covered, for 10 minutes. In a small
saucepan, heat the rice vinegar, sugar, and salt over low heat until the sugar
and salt have dissolved. While the rice is still warm, transfer it to a large
mixing bowl. Pour the vinegar mixture over the rice and gently fold it into the
rice. Allow the rice to cool to room temperature. To assemble the rolls, lay a
sheet of nori seaweed shiny-side down on a sushi rolling mat. Spread a thin
layer of sushi rice over the nori, leaving about 1/2 inch of space at the top.
Place your filling ingredients of choice in a line across the centre of the
rice. Use the sushi rolling mat to tightly roll the sushi, starting from the
bottom and rolling upwards. Once the sushi is rolled, use a sharp knife to cut
it into slices. Repeat the process with the remaining nori and filling
ingredients. Serve the sushi with soy sauce, wasabi, and pickled ginger on the
side.
