Zucchini slice: a delicious and nutritious dish

 


Raw materials:

To make the perfect zucchini slice, you'll need the following ingredients:

  • 4 zucchini, grated
  • 1 onion, diced
  • 1 cup self-raising flour
  • 1/2 cup vegetable oil
  • 6 eggs, lightly beaten
  • 1 cup of grated cheddar cheese
  • Salt and pepper to taste

Instructions:

Preheat your oven to 180°C and line a 20cm x 30cm baking dish with baking paper. combine grated zucchini, diced onion, self-raising flour, vegetable oil, beaten egg, grated cheddar cheese, salt and pepper. Mix well until all ingredients are combined. Pour the mixture into the baking dish and smooth the surface with a spatula. Bake and cook the zucchini slices in the preheated oven for 35-40 minutes or until golden brown. Allow the zucchini slices to cool for 10-15 minutes before slicing and serving.


Tips:

To make your zucchini slices even healthier, you can substitute an almond meal or coconut flour for the self-raising flour.

If you are not a fan of cheddar cheese, you can use any other cheese of your choice, such as parmesan or feta.

Add more vegetables to your zucchini slice, such as grated carrots or sweet potatoes, to make it more nutritious.
